"health salad" with champagne vinaigrette
My Mom is definitely the healthiest eater I know... yet she still
manages to make even the healthiest of dishes taste delicious.
She was inspired to create this salad after a visit to Arizona's
"True Food Kitchen" restaurant, which is owned by chef
Andrew Weil, Oprah's former personal chef. The restaurant's menu
is based on simple, fresh, pure ingredients - with a focus on vegetables,
whole grains, fish and chicken (just like Mom's kitchen at home!)
This salad is full of bright colours and flavours, and I love the
addition of manchego cheese.
ingredients for champagne vinaigrette

Tbsp Dijon mustard
c champagne vinegar
Tbsp fresh lemon juice
dashes hot sauce
c extra virgin olive oil
Pour everything but the olive oil into the bowl of a food processor.
Slowly add the olive oil in a steady stream until combined. Pour
over salad ingredients - see below.
you can substitute apple cider vinegar for the champagne vinegar
free to alter the ingredients based on your tastes and what you
have in the fridge (and what looks best at the market!)
lettuce or mixed salad greens
beets, cooked or raw
cheese, small dice
- top with cooked chicken or fish to make it a meal.

chicken quesadilla's (these are my favourite). Two flour
tortilla's are stuffed with a mixture of chopped curried chicken
with diced peppers, currants and asiago cheese. Whenever the chefs
would make them, myself and the staff would gobble them up before
they even had a chance to be sold to our customers...which made
me realize that we should really add them to our menu! $10.98
mediterranean style mac & cheese
we took our classic 3 cheese macaroni and added goat cheese, pesto
