annual Bake Sale to benefit Kids Ability on Friday, April, 16, 2010 |
Please
join us for our 2nd annual "Bake Sale to Benefit" Kids
Ability on Friday, April 16th, 2010 from 10 a.m. - 4:00 p.m.
All of the profits from the baked goods will benefit children
right here in our community with disabilities to help them reach
their potential.
Sometime
after 5 p.m., I’ll head down to Conestoga Mall (where the
Radiothon is taking place) and I’ll let them know how much
money we were able to raise with our sale.
We’ll
be selling all sorts of delicious baked goodies, including cupcakes,
squares, cakes, cookies, muffins, pies and of course our signature
lemon currant scones. We’ll sell the items in individual
as well as “family” sized portions.
Hope to see you in the shop on April 16th to support this great
cause.

Our
best-selling quesadilla is the bacon, apple, caramelized onion
and aged cheddar variety. Although I really enjoy this quesadilla
and would never dream of taking it off the menu, my all-time favourite
is the roasted vegetable, red pepper jelly and brie variety.
Have
you tried our new pulled pork, black bean, corn and cheddar quesadilla?
It's delicious too, especially when served with our cilantro-lime
sour cream.

coconut,
ginger, chicken & lemon soup
My
last Waterloo Chronicle column featured a recipe for Tempura Shrimp,
inspired by a visit to the popular U.S. Asian-fusion restaurant
chain "PF Changs".
Here is another delicious recipe with Asian flavours - and even
though it's warming up outside, soup is still making an appearance
at many dinner tables!
serves
about 4
ingredients
- 1
can light coconut milk
- 1
cup chicken stock
- grated
zest from one lime
- grated
zest from one lemon
- 2
TBSP grated fresh ginger
- 1/4
tsp red pepper flakes
- 125
grams boneless chicken breasts, thinly sliced and cut into 1
inch pieces
- 1/4
red bell pepper, cut into thin strips
- 2
TBSP fish sauce
- 2
TBSP chopped fresh cilantro
method
- In
a saucepan over medium heat, cook coconut milk, stock, lime
and lemon zests, ginger and red pepper flakes until hot but
not boiling.

Add chicken and red pepper and cook until chicken is no longer
pink inside, about 5 minutes. Stir in fish sauce and cilantro.
note:
you can add 1 TBSP of brown sugar is you like a bit of sweetness.

Easter Chocolate and Goodies are here! |
It
may be cold and rainy outside, but it feels like spring inside
of our shop! All of our new spring merchandise (wreaths, tea towels,
cocktail napkins, cheese spreaders and more) has arrived, along
with our Easter chocolate!
We
have a huge selection of Easter chocolate and candy from Rheo
Thompson Candies and Reid's Chocolate.

Speaking of Chocolate... |
| We're
carrying a new line of locally made chocolate from "Exquistely
Chocolate", made right here in Waterloo.
To
be honest, I wasn't even looking to add to our selection of chocolate
(as we already have a great selection from Rheo Thompson Candies
and Reid's). However, after trying a sample (or ten!) that Len
and Tricia Eagle (the owners of Exquistely Chocolate) dropped
off, we were all hooked.
Exquistely
Chocolate specializes in hand-rolled truffles and they are hands-down
the best truffles that I have ever tasted. I try to be relatively
careful about what I eat but my willpower lost on that fateful
Exquistely Chocolate sample day...
Len
and Tricia Eagle will be coming to our shop on Saturday, April
3rd to offer a free tasting of their new chocolate line up. Please
stop by to try a taste (or two!)
