perfect
salmon pasta sauce
Many
years ago, this recipe won an award in The Record under
the "best pasta" category. It's super easy, fast and
fresh, and special enough for company.
Fresh
Peas are now in season but you can substitute frozen peas (try
the tiny petite pois available from President's Choice) if you
have trouble finding fresh.
yields:
about 2.5 cups sauce or enough for 4 medium sized portions
ingredients
- 1.5
cups cream (18% or 35%)
- 4-6
oz smoked salmon ("t & j seafood" smoked salmon
is great - try it if you haven't already!)
- 1
cup fresh green peas
- 1/2
- 1 teaspoon fresh lemon zest
- slivers
of sundried tomatoes, to taste
- freshly
grated parmesan cheese, to taste
- your
choice of cooked pasta (David likes spaghettini, I like shorter
pasta like rotini or fusilli)
- salt
and pepper, to taste
method
- Simmer
peas in cream until cooked. Add lemon zest and chopped salmon.
Heat thoroughly.
- Toss
sauce with cooked pasta.
- Garnish
with tomatoes and cheese. Season with salt and pepper, if desired.

new gluten-free baking available at DSG! |
I
am so excited to announce that we are selling a new line of DELICIOUS
gluten-free baking.
Over
the past several years, I've had many requests to expand our offering
of gluten-free products. We make a handful of gluten free items
in our kitchen (our cheese tortes, coq-au-vin, cashew chicken
curry, beef chili and most of our soups) but we haven't offered
any gluten free desserts or baking... until today!
The
problem was that most of the gluten-free products I tried were
dry or had an off flavour or aftertaste... I'm thrilled to finally
be able to offer a gluten free baking product line that anyone
would enjoy - celiac or not.
As
of today (June 5th) we are selling the following gluten free items:

| Did
you know that peas are members of the legume family? English peas
are grown to be eaten fresh (after being removed from their pods).
Field peas are grown specifically to be used dried. Snow peas
and sugar snap peas are meant to be eaten pod and all.
My
friend Martha serves big bowls of English peas as a simple appetizer.
We sit outside on her deck and nibble on peas - we have fun shucking
them from their pods while we chat. Best of all, they are super
healthy and definitely guilt free!

| If
you need thinly sliced smoked salmon for a recipe, put your salmon
in the freezer for an hour or two before cutting. It is so much
easier to slice into thin strips if it is slightly frozen!
