recipe of the month |
pastry
wrapped brie with strawberries and fresh basil
Try
this delicious recipe, highlighting creamy brie and fresh Ontario
strawberries (coming soon!)
Ingredients:
-
1/2 cup strawberry preserves
- 1/3
cup fresh strawberries, sliced
- 1-2
teaspoons finely chopped basil (fresh, not dried)
- 1
sheet frozen puff pastry (half of 17.3-ounce package), thawed
- 1
14-ounce Brie cheese (about 6 to 7 inches in diameter)
- 1
large egg, beaten to blend (for glaze)
- Crackers,
flatbread and baguette slices
Method:
1.
Preheat oven to 400°F.
2.
Stir preserves, berries and basil in small bowl to blend. Roll
out pastry on lightly floured surface to 12-inch square. Scrape
top rind off cheese; discard rind. Place cheese, rindless side
up, in center of pastry. Spoon berry mixture onto cheese. Fold
pastry on 2 opposite sides over cheese. Brush remaining 2 sides
of pastry with glaze. Fold over cheese; press seams to seal. Brush
pastry with glaze; place on baking sheet.
3.
Bake cheese until pastry is deep golden brown (top of pastry may
split open), about 30 minutes. Let cool 20 minutes.
4.
Place baked cheese on serving platter. Surround with crackers,
baguette slices, and fresh fruit, if desired.

"vanilla sugar"
How to make "vanilla sugar"? Slice down
the side of a fresh vanilla bean and scrape the seeds into an
airtight container filled with 2 cups of white granulated sugar.
Bury the bean in sugar and seal with lid. Let sit for one to two
weeks. Use in place of regular granulated sugar for a sweet taste
of vanilla!

dana's
secrets |

baking
bacon? The
next time you want to cook bacon, try baking it instead of frying.
Less mess, less fat, more yield (and it won't curl!)
We
line our baking sheets with foil (for easier clean up) and then
top the foil with a piece of parchment paper so the bacon doesn't
stick.
Bake
in a 350 F to 375 F oven until bacon is brown and crispy.
For
a very special treat, try our brown sugar rubbed bacon. Sprinkle
1 1/2 teaspoons of brown sugar onto a slice of bacon and lay another
piece directly on top (to cover sugar) and twist. Bake on a parchment
lined baking sheet until crispy.

m & g shortbread |
We've
added some fantastic new shortbreads to our line of retail gourmet
food products. Toronto based "m & g kitchens" offers
both sweet and savoury shortbreads - we sell the following varieties
in our shop:
- chai
shortbread (my fav!)
- buttercrunch
shortbread (Caroll's fav!)
- moroccan
spice
- herbes
de provence
- chocolate
hazelnut
I
love the tiny size of the shortbread (about the size of dice -
the savoury flavours make a light and easy appetizer and the sweet
varieties are perfect when you need a little something to satisfy
your sweet tooth!
The
shortbread come in 150 gram packages and retail for $7.99.

cinnamon bun saturdays |
| If
you're receiving this newsletter, chances are you've had the chance
to try one of our ready-to-bake scones.
Scones have been a best seller since we opened
the shop, so we thought it would be fun to come up with another
ready-to-bake breakfast goodie.
On Saturday's, we now offer our mouth watering
cinnamon raisin buns. We package 8 buns in disposable,
oven ready containers. Simply bake until puffed and golden and
top with our buttermilk cream cheese icing.
The buns freeze great too...if you don't want
to eat them all at once, simply wrap the leftover buns in saran
and freeze. When you're ready for more, thaw the buns in the microwave
(use the defrost setting - it will take about 2 minutes) or wrap
the bun/s in foil and re-heat in the oven until warm.
