once a week for the rest of my life! So if you didn't get your
fill this Christmas, check out our new hearty casserole - turkey
and veggies in a rich gravy with a cranberry stuffing topping.
New

We

Day chocolate and candy will be arriving soon.
Speaking
of Valentines Day, we are due to receive more brie bakers (and
goat cheese bakers) this week. If you didn't get one for x-mas,
this would be a great gift to give or to receive for St. Valentine's
Day.

recipe of the month |
chicken
with apple brandy cream sauce
This is fantastic served with buttermilk mashed
potatoes and steamed green beans!
yields:
4 servings
ingredients
- 3 tablespoons butter
- 4 boneless, skinless chicken breast halves
- all-purpose flour
- 3 golden delicious apples, peeled, cored and
sliced
- 1/2 cup applejack or Calvados (apple brandy)
- 1/4 cup brandy
- 1 cup whipping cream
method
- Melt butter in a heavy large skillet over medium
high heat.
- Season chicken with salt and pepper. Coat with
flour, shaking off excess. Add chicken to skillet and cook until
brown on both sides and cooked through, about 4-5 minutes per
side. Transfer to platter.
- Pour off all but 1 tablespoon butter from
skillet. Add apples and both brandies; simmer over medium heat
until apples are tender and liquid is slightly syrupy, about
7 minutes. Using slotted spoon, transfer apples to platter with
chicken.
- Add cream to skillet, boil until thickened
to sauce consistency, about 5 minutes. Season with salt and
pepper.
- Return chicken and apples to skillet/sauce
and heat through, about 2 minutes. Serve hot.

correction
to waterloo chronicle column yogurt recipe |
When
my last article (published December 30th, 2009) was being edited
at the Chronicle, they mistakenly changed 1/4 cup of
honey to 1 cup of honey.
Please,
please, please only add 1/4 cup of honey to the strained yogurt!
The correct recipe can be found on my website at www.danashortt.ca
under "recipes". FYI - The chronicle is also going to
print the correction in this week's edition.
