april, 16, 2010 |
Please
join us for our 2nd annual "Bake Sale to Benefit"
KidsAbility on Friday, April 16th, 2010 from
10 a.m. - 4:00 p.m.
All
of the profits from the sale of baked goods will benefit
children with disabilities right here in our community to help
them reach their potential.
check
out their website at:
www.kidsability.ca
Sometime
after 5 p.m., I’ll head down to Conestoga Mall (where the
Radiothon is taking place) and I’ll let them know how much
money we were able to raise with our sale.
We’ll
be selling all sorts of delicious baked goodies, including cupcakes,
squares, cakes, cookies, muffins, pies and of course our signature
lemon currant scones. We’ll sell the items in individual
as well as “family” sized portions.
Hope to see you in the shop on April 16th to support this great
cause.

recipe of the month |
Lesley
Stowe's Lemon Cream Cheese Muffins
This recipe was featured in Canadian Living magazine
many years ago. These delicious baked goodies are a cross between
a muffin and a lemon loaf.
Perhaps you reconize the name Lesley Stowe? Lesley owned a busy
food shop and catering business in Vancouver for many years...
and she is now the producer of the highly popular (and addicitve!)
raincoast crisp crackers.
These muffins were sold at Lesley Stowe Fine Food Shop - and they
were so popular that many customers would phone ahead to have
the muffins put aside before they sold out!
I've made them a few times and they are always a hit - and they
would be a wonderful addition to your Easter brunch buffet!
ingredients for muffins
-
1 1/4 cups all-purpose flour
- 2/3
cup granulated sugar
- 1
1/2 teaspoons baking powder
- 1/2
teaspoon salt
- 1
package (4 oz/125 gram) cream
- cheese,
cut into bits
- 1
egg
- 1/2
cup milk
- 1/3
cup vegetable oil
- 1
tablespoon grated lemon rind
- 1
tablespoon lemon juice
ingredients
for glaze
-
2 tablespoons granulated sugar
- 2
tablespoons lemon juice
method
-
In a large bowl, stir together flour, sugar, baking powder and
salt. Add cream cheese bits and gently mix. In a separate bowl,
whisk together egg, milk, oil, lemon rind and lemon juice; pour
over dry ingredients and stir until just combined.
-
Spoon batter into 8 greased muffin cups; bake in centre of 350
F oven for 20 to 25 minutes or until tops are firm to the touch.
- Glaze
- combine sugar and lemon juice; brush over hot muffin cups.

hog
tails BBQ |
If
you read the KW Record, you may recall a recent "dining out"
review on the newly opened "Hog Tails", which is a southern
pit BBQ restaurant.
David
and I love BBQ and southern food so I was soooo excited to check
this restaurant out!
I
ordered a slew of dishes - a fried shrimp po'boy sandwich for
me (delicious - their 'Nawlins style remoulade was to die for),
a 3 meat platter for David (hot wings, bbq chicken, texas beef
brisket with onion rings and potato salad), baked beans and collard
greens. Yes, we were both VERY full after eating! (and yes, there
were leftovers). I found the prices very reasonable, especially
considering the portion sizes and quality (all meat is locally
raised and butchered; they also use local produce when possible).
The
place was packed, and I went in around 4 p.m. for a pick up. If
you are interested in doing take-out, you can call ahead and they
will have your order ready (I waited about 30 min. for the above
meal).
Their
location is 645 Laurelwood Dr. (across from Sir John A. MacDonald
High School) and their website is:
